Sweets for Raksha Bandhan

1. Dry Fruit Burfi

Ingredients

  • 1 ½ cup dried figs
  • 1 cup dates
  • ⅓ cup chopped pistachios
  • ¼ cup chopped almonds
  • ¼ cup chopped cashews
  • 3 tsp ghee
  • ½ tsp cardamom powder

Method

  • Roast the nuts in a dry pan over medium heat for 2-3 minutes or until they smell good. Set them aside.
  • Soak the figs in hot water for 10 minutes. Then, drain them well and blend them in a food processor or blender until you get a smooth paste. Set the paste aside for later use.
  • Remove the seeds from the dates, blend them into a coarse paste, chop them roughly, then set them aside.
  • Heat ghee in a pan and add the fig paste. Cook over medium heat for 3-4 minutes. Then add the dates and cook for another 2-3 minutes.
  • Add the roasted nuts and cardamom powder and mix well. Cook for one minute, then remove from heat.
  • Spread the contents onto a greased tray or pan. Grease the bottom of a steel bowl or glass, and press the mixture evenly.
  • After cooling and refrigerating the mixture for 20-30 minutes, get creative and shape it as you like.

    2. Dry Fruit and Nut Laddoos

    Ingredients

    • Dates: 1 cup (pitted and chopped)
    • Figs: 1/2 cup (chopped)
    • Almonds: 1/2 cup
    • Cashews: 1/2 cup
    • Walnuts: 1/4 cup
    • Pistachios: 1/4 cup
    • Raisins: 1/4 cup
    • Desiccated Coconut: 1/2 cup
    • Poppy Seeds (Khus Khus): 2 tablespoons
    • Cardamom Powder: 1 teaspoon
    • Ghee (Clarified Butter): 1-2 tablespoons

    Method

    • On a medium flame, roast almonds and cashews until they turn golden brown.
    • Add the pistachios to the same pan and toast them for another 3 to 4 minutes.
    • Once the nuts have turned golden, turn off the stove and place the dates, apricots, and figs in a hot pan.
    • Flip them over to cook the other side when they become slightly hot.
    • Cool down the nuts and dried fruits, then toast them in a pan until they become somewhat aromatic.
    • First, blend the apricots, figs, and dates into a coarse mixture. Then, add the nuts and blend everything.
    • Make a fine powder of all the dried fruits and nuts.
    • Mix the powder thoroughly. Divide the powder into 10-12 balls and gently shape them into balls.

    3. Choco Dry Fruits Roll

    Ingredients

    • Marie Biscuits: 200 grams (or any plain tea biscuits)
    • Cocoa Powder: 3 tablespoons
    • Powdered Sugar: 3 tablespoons
    • Butter: 3 tablespoons (melted)
    • Milk: 4-5 tablespoons
    • Mixed Dry Fruits: 1 cup (chopped) – use almonds, cashews, pistachios, walnuts, raisins, and dates
    • Desiccated Coconut: 2 tablespoons
    • Condensed Milk: 1/2 cup
    • Cardamom Powder: 1/2 teaspoon

    Method

    • Grind the Marie biscuits into a fine powder using a food processor or blender.
    • Combine the biscuit powder, cocoa powder, and powdered sugar in a large mixing bowl.
    • Add the melted butter and mix well. Gradually add milk, one tablespoon at a time at a time, until the mixture forms a smooth dough.
    • Cover the dough with plastic wrap and rest for 10-15 minutes.
    • Finely chop the mixed dry fruits and dates.
    • In a bowl, mix the chopped dried fruits, desiccated coconut, condensed milk, and cardamom powder.
    • Lay plastic wrap or parchment paper on a flat surface. Place the chocolate dough on it and cover it with another piece of wrap or paper. Roll the dough into a 1/4-inch thick rectangular shape. 
    • Remove the top sheet of plastic wrap or parchment paper. Evenly spread the dry fruit filling over the rolled-out chocolate dough.
    • Start by lifting one end of the plastic wrap or parchment paper and tightly rolling the dough into a log, encasing the filling. Use the wrap to shape and tighten the roll.
    • Wrap the roll tightly in plastic wrap and refrigerate for at least 1-2 hours or until firm.
    • Once the roll is firm, unwrap and slice it into 1/2-inch thick pieces.

    4. Eggless Plum Cake

    Ingredients

    • 1 cup all-purpose flour (maida)
    • 1/2 cup whole wheat flour
    • 1 cup mixed dry fruits (chopped almonds, cashews, raisins, walnuts, etc.)
    • 1/2 cup mixed chopped candied fruits (green and red cherries.)
    • 1 cup orange juice
    • 3/4 cup granulated sugar
    • 1/2 cup vegetable oil or melted butter
    • 1/2 cup yogurt (curd)
    • 1 tsp baking powder
    • 1/2 tsp baking soda
    • 1/2 tsp ground cinnamon
    • 1/2 tsp ground nutmeg
    • 1/4 tsp ground cloves
    • 1 tsp vanilla extract
    • A pinch of salt

    Method

    • For best results, soak dried fruits and nuts in orange juice for 1-2 hours or overnight in the refrigerator.
    • Preheat your oven to 180°C (350°F). Grease and line a 9-inch round or square cake tin with parchment paper.
    • In a large mixing bowl, sift together the all-purpose flour, whole wheat flour, baking powder, baking soda, ground cinnamon, ground nutmeg, ground cloves, and a pinch of salt.
    • In another bowl, whisk together the sugar, vegetable oil, melted butter, yogurt, and vanilla extract until smooth.
    • Add the wet mixture to the dry ingredients gradually. Mix gently until just combined. Avoid overmixing.
    • Drain excess orange juice from soaked fruits and nuts, then fold into the batter with the candied fruits.
    • Pour the batter into the prepared cake tin, spread it evenly, and gently tap the tin on the counter to remove any air bubbles.
    • Bake for 35-40 minutes or until a toothpick comes out clean.
    • Cool the cake in the pan for 10 minutes, then transfer to a wire rack to cool completely.

    5. Almonds and Figs Barfi

    Instructions

    • 1 cup dried figs (about 200 grams)
    • 1 cup almonds (about 150 grams)
    • 1/2 cup powdered sugar (adjust to taste)
    • 1/2 teaspoon cardamom powder
    • A pinch of saffron strands
    • 1 tablespoon ghee (for greasing)
    • 2 tablespoons chopped almonds and pistachios (for garnish)

    Method

    • Soak dried figs in warm water for 30 minutes, then blend into a smooth paste.
    • Roast chopped almonds over medium heat until they turn golden brown, then set aside.
    • In a separate pan, cook the fig paste over low heat, stirring continuously to prevent sticking or burning.
    • Once the fig paste thickens, add powdered sugar, cardamom powder, and a pinch of saffron. Mix well.
    • Add the roasted almonds to the fig mixture and mix them in thoroughly.
    • Grease a plate or tray with ghee and spread the mixture evenly with a spatula.
    • Allow the mixture to cool completely at room temperature before proceeding to the next step.
